Chunky is not always a positive term – unless it relates to Pico di Gallo salsa! Homemade chunky salsa is a tasty favorite that adds color to any tailgate or casual party.
I keep these ingredients in my pantry and refrigerator at all times.
The Basics:
Two cans of Original Rotel (diced tomatoes with chiles)
Chopped onions – I prefer a batch of green onions, but any diced onion will be fine.
Fresh cilantro – This makes the dish have a great Southwest taste. (I was thankful that my older daughter and son-in-law bought me a live cilantro plant so I have it fresh anytime!)
One finely chopped fresh jalapeno
Salt
Black Pepper
A squeeze of lime or lemon for a zestier touch if desired
To make corn or black bean chunky salsa (or both), add to the above basic salsa:
One can of drained sweet corn
One can of rinsed and drained black beans
Surely a Final Touch: If you have taco seasoning, you can add a pinch to any of the above salsas for extra flavor.
